VOV.VN - Visitors to the 2026 Spring Fair have recently been drawn to an exhibition area featuring specialties from the northwest highlandsthat captivate diners with their quality and rich cultural identity.
The northwestern culinary specialties on display, including smoked meat, sausages, hot dogs, chẩm chéo (a traditional dipping sauce), as well as fruits, tea, and coffee, are all made from natural ingredients sourced from the region’s mountains and forests, and their distinctive local cooking methods also attract visitors.
The exhibition area displays smoked buffalo meat and spring fruits from the highlands, creating unique culinary experience.
In addition, fresh fruits, wild bamboo shoots, mustard greens, corn wine, and wild apple wine contribute to completing the “flavour map,” making it unforgettable for those who have tasted and become familiar with these flavours.
The stalls also tell the stories about local products for visitors to explore, experience, and spread the value of traditional highland culinary culture.
Sustomers are highly interested in specialties from the northwestern region. Smoked meat, sausages, hot dogs, and chẩm chéo are particularly popular with customers in Hanoi, says Lo Thi Suong, owner of the Phong Suong smoked meat production facility in Dien Bien Province.
Le Hong Anh, director of Son La’s Center for Investment, Trade and Tourism Promotion, stresses that at the 2026 Spring Fair, Son La is bringing hundreds of products, including local food and cultural items, especially fruits and processed products made in Son La, to serve people during the Lunar New Year (Tet) festival.
Son La offers Hanoi’s residents and tourists more than 30 products, including fresh seasonal fruits and processed fruit products, the centre director says.
Doan Anh Dung, a local resident from Hanoi, shares that he enjoys specialty tea from the highlands, such as San Tuyet tea or Thai Nguyen bud tea.
The Spring Fair also introduces customs and daily lives of the Thai, Mong, Dao, Tay ethnic groups.
Vi Oanh, a local resident from Lang Son province, shares that the fair helps her understand more about the culture in the northwestern region.
The Arabica coffee products of Hai An Company in Dien Bien province are very popular with customers, especially international visitors.

The Spring Fair, the first of its kind, aims to connect production, distribution and markets, and promote Vietnamese products and brands at home and abroad.
The event covering up to 130,000 m² at the largest exposition centre in Southeast Asia features 3,000 booths, attracting approximately 2,500 domestic and international businesses, and is expected to welcome millions of visitors.
The fair is scheduled to run from February 2 to 13 at the National Exposition Centre, Hanoi
